Heirloom cocoa from the edge of the Amazon basin, fermented in small wooden boxes at altitude.
The place
Zamora-Chinchipe lies where the Andes fall away into the Amazon. Cocoa grows at higher altitude than almost anywhere we buy, ripening slowly in cool cloud and steady rain.
The beans
These are ancient Amazonian genetics: small pods, pale beans, and a perfume of green banana, honey and wildflower that survives roasting if you are careful with it.
The smallest lot we buy
Zamora harvests are tiny, sometimes only a few hundred kilos, so the bars are seasonal and sell out. We buy the whole harvest every year regardless of size.
