Trinitario beans from Mindanao: deep, fudgy and dark-fruited. A partnership that has grown from a handful of farmers to a whole community.
The place
The farms sit on the volcanic slopes outside Davao City on the island of Mindanao, where cocoa is intercropped with coconut and durian and harvest runs nearly year round.
The beans
Davao Trinitario gives us the fudgiest chocolate we make: molasses, dark fruit and roasted coffee, with very little acidity. It is the backbone of our dark milk bars.
Growing together
We began with eleven farmers and one fermentary. The group now includes more than eighty households, a second fermentary and a cocoa nursery raising grafted seedlings for new plantings.
